An Pan

An Pan is a type of sweet bread from Japan. An Pan has a flat round shape, filled with red bean paste.
 

INGREDIENTS:
 
Dough:
  • 700 gr – Lonceng Wheat Flour
  • 300 gr – Mila Serbaguna All Purpose Flour
  • 200 g - Sugar
  • 20 gr - Yeast
  • 10 gr - Bread Improver
  • 30 g - Milk Powder
  • 175 gr - Eggs
  • 125 gr - Fresh Cream
  • 300 gr - Ice Water 
  • 15 gr - Salt
  • 175 gr - Butter
 
Stuffing:
  • Red Bean Paste

METHOD :

  1. Mixed in the flour, sugar, yeast, bread improver, milk powder, eggs, fresh cream, and ice water into the mixer, stir until ¾ smooth.
  2. Add salt and margarine and stir until smooth.
  3. Remove the dough from the mixer and let it stand for 60 minutes.
  4. Weigh the dough to 60gr each. Round them and let them stand for 15 minutes.
  5. Milled dough, filled with red bean paste, then round it.
  6. Place the dough in the pan and put the mixture into a proofing box for 120 minutes.
  7. Baked the batter in the oven with a temperature of 190°C for + - 15 minutes or until done.
