Coconut Rainbow Bread

Inspired from the popular cake lately, that is the rainbow cake. We have made a new creation i.e. Rainbow Coconut Bread.
 
The sweet colourful bread may accompany you and friends while enjoing tea.
 
This bread has a colourful topping and has a crunchy skin, however, the texture of the bread itself is still soft and tender. By adding coconut has made this bread more tasty and suitable for all ages.

INGREDIENTS:

Dough:
  • 800 gram lonceng hijau
  • 10 gram Bread Improver
  • 15 gram Instant yeast
  • 30 gram milk powder
  • 15 gram salt
  • 200 gram sugar
  • 200 gram whole egg
  • 150 gram margarine/butter
  • 200 gram ice water

Filling bread:
  • 325 gram Butter
  • 325 gram castor sugar
  • 125 gram grated coconut
  • 325 gram Mila serbaguna
  • 25 gram milk powder
  • 5 gram flavor pandan

Rainbow Topping:
  • 150 gram butter
  • 125 gram castor sugar
  • 125 gram whole egg
  • 350 gram mila serbaguna
  • 5 gram baking powder
  • Food coloring green
  • Food coloring yellow
  • Food coloring purple

METHOD:

Bread Directions :
  1. Place all dry ingredient ( flour, salt, sugar, bread improver, milk powder and instant yeast) into mixing bowl.
  2. Add ice water and whole egg into mixer bowl, and mix with medium speed until developed.
  3. Add butter/margarine. Change to high speed and mix until the dough is developed.
  4. Remove the dough from mixing bowl, resting dough for 15 minutes.
  5. Divide dough into 55 gram.
  6. Fill with coconut filling place into pan.
  7. Top  the dough  with  rainbow topping, and sprinkle sugar over rainbow topping.
  8. Proof  for  45 – 60 minutes.
  9. Bake at 180° for 15 - 20 minutes.
  10. Bread ready to served.
 
Coconut filling  Directions :
  1. Mix butter and castor sugar.
  2. Add grated coconut,  mila serbaguna, and milk powder. Mix well.
  3. Add flavor pandan a little bite.
  4. Keep in refrigerator  at least for 1 hour.
  5. Coconut filling ready to use.
 
Rainbow Topping Directions:
  1. Mix  at medium speed butter and castor sugar till a until light and fluffy.
  2. Add whole egg, mix well.
  3. Add flour mila serbaguna and baking powder. Mix well.
  4. Divide into 3. Add food color in each dough.
  5. Sheet each dough , layering the dough then roll ( like a roll cake ) and keep into refrigerator until set or firm.
  6. Cut to 1 cm thickness 
  7. Roll out the dough  and top to the bread dough.
